    Recall the Dandelion Green Soup Video from Module 2. Use your spring greens knowledge to mix up a batch of steamed dandelion greens, and create a soup out of it –to eat! . Add any spring greens you like to the mix: violet, chicory, leeks, garden nibbles, fresh herbs poking out of the ground, plantain, chicory, whatever you have come across and desire to add. Dandelion greens are least bitter when small.

    I have no dandelions to harvest yet.
    Last year, I pick some leaves and put them in a salad with arugula.
    I am not much of a fan, yet happy to explore and try new things.
    When my yard begins to green up and grow, I will try to harvest again and taste again.
    Maybe I harvested too late last summer.
    I will try to harvest earlier this spring, so the leaves are less bitter.
    I will try with leeks, other spring greens, and some fresh herbs.
    I did not mind the dandelion root tea we made in the fall.

    My daughter and I made the dandelions with wild leeks for a pesto. At first, we ate some raw and while they were good, my gut hurt a little bit after. It cleansed me for sure, I had about a cup of raw greens. Then I made a dandelion brew and drank it 3 days after brewing it. I drank it cold and it was bitter, so I added a little maple syrup and got a similar intense feeling in my belly.

    I did not make dandelion soup, but I did harvest some wild leeks from my back woods. I made them into a butter spread to make an herb garlic bread. Delicious! I learned about the wild leeks a few years ago with Angie, and since then I try to harvest a few each spring. I just love their flavor. One of these days I will try dandelions. When I was a little girl, my dad loved to pick dandelion greens. He and our neighbor liked to drink dandelion wine. It’s a vague memory because I was so young, but one I hold on to.

    I haven’t done this in years but as a child, with my grandmother, I would pick dandelion greens to steam and enjoy similarly to spinach. From what I remember they were not awful….

    I am looking forward to taking this knowledge, creating a “recipe” book, and coming back to them throughout the years! I take great pride and joy in providing for my family without a trip to town. These things I am learning are not just going to help my family and I but I can share with others too!
